Milwaukee’s Original Craft Brewery
1968–1972
European Roots
Randal Sprecher developed his interest in brewing while stationed in Augsburg, Germany, where he was exposed to traditional Bavarian beer and Old World brewing techniques. That experience shaped his long-term philosophy around quality, process, and authenticity, which would later define the foundation of his brewery.
After returning to California, he began brewing at home and pursued formal education in fermentation science at UC Davis in 1972. Early attempts to start a microbrewery were ahead of their time, but this period established the technical knowledge and vision that would drive the company forward.
1972–1984
Milwaukee Brewing
Sprecher relocated to Milwaukee and joined Pabst Brewing Company, where he worked as a supervisor in brewing operations. This role gave him direct experience in large-scale production, quality control, and brewery management within one of America’s historic brewing centers.
Over several years, he developed the operational discipline and technical expertise necessary to run a brewery independently. This phase bridged the gap between academic training and real-world execution, preparing him to launch his own company.
1984–1993
Founding Sprecher
In 1984, Sprecher left Pabst to establish Sprecher Brewing Company, officially opening in 1985 in Milwaukee’s Walker’s Point neighborhood. The brewery became the first new brewery in the city since Prohibition, marking a major milestone in Milwaukee’s modern craft brewing movement.
Operating on a limited budget, Sprecher built much of the original equipment himself and began producing small batches of beer, with less than 1,000 barrels in the first year. This period established the company’s identity as a hands-on, quality-driven craft operation.
1993–1994
Relocation and Expansion
Randal Sprecher first developed his passion for brewing while stationed in Augsburg, Germany during military service. Immersed in Bavarian beer culture, he experienced traditional brewing methods that emphasized quality, patience, and flavor. That exposure left a lasting impression and shaped the philosophy that would later define his approach to brewing.
After returning to California, Sprecher began brewing German-style beers at home and, in 1972, pursued formal training in fermentation science at UC Davis. Early efforts to launch a microbrewery were ahead of their time and ultimately rejected, but the setback redirected him to Milwaukee, where he joined Pabst Brewing Company and gained the technical and operational experience needed to bring his vision to life.
1993-2020
National Recognition
In 1984, Sprecher left Pabst to establish Sprecher Brewing Company, bringing European-style craft brewing back to a city long dominated by large-scale production. His goal was to create high-quality beer rooted in tradition while building something independent and enduring.
The first brewery opened in 1985 at 730 W. Oregon Street in Milwaukee’s Walker’s Point neighborhood, becoming the city’s first craft brewery since Prohibition. Built with the help of friends, much of the equipment, including the original gas-fired brew kettle, was constructed by hand, laying the groundwork for the fire-brewing process that would become a defining feature of the brand.
1993–2020
Growth and Reinvention
In 1993, a canal retaining wall collapse disrupted access to the original brewery, forcing a major transition. The following year, Sprecher relocated to a renovated industrial facility in Glendale, Wisconsin, where the business could expand production and operate at a larger scale. This move became a turning point that enabled long-term growth.
Over time, Sprecher expanded beyond beer into craft sodas, refining its fire-brewing method and incorporating raw honey to create bold, distinctive flavors. This approach helped elevate Sprecher Root Beer to national recognition and drove widespread demand. In February 2020, Randal Sprecher retired and sold the company to a small group of Milwaukee investors, ensuring the brewery remained locally owned while continuing to grow its national presence.
